APRICOT PISTACHIO SALAD

  • 1 cup organic arugula 
  • 1/4 cup raw pistachios
  • 1 organic apricot 
  • 1/2 organic apple
  • 1/2 cup organic fennel 
  • 2 tbs. organic parsley 
  • 1 tbs. organic dill

FOR THE DRESSING: 2 tbs. cold pressed flax seed oil, 1 clove organic minced garlic, 1 small organic shallot, 1 tbs. fresh lemon juice, salt and pepper to taste. Thinly slice the shallot and mix all ingredients.

How to make: Chop salad ingredients and toss with flax seed dressing.
