Chickpea Blondies

Macronutrients per serving (16 servings): 5g Protein, 8g Fat, 25g Carbohydrate

  • 27oz Chickpeas. rinsed and drained

  • 0.9 cup Nut Butter

  • 0.4 cup Honey or Maple Syrup

  • 0.4 cup Coconut Sugar

  • 1.8 tbsp Non-dairy Milk

  • 3.6 tsp Vanilla

  • 1 tsp Salt

  • 1 tsp Baking Powder

  • 0.5 tsp Baking Soda

  • 1 cup Dark Chocolate Chips

    • Preheat the oven to 350 degrees.

    • Grease 9” baking pan.

    • Put all ingredients (except chocolate chips) in to a blender and blend until smooth. Mix chocolate chips in by hand and pour mixture into pan.

    • Bake for 20-30 minutes or until edges are slightly browned and pull away from the pan.

I have made these numerous times using different nut butters such as almond butter, sunflower butter, and cashew butter, all of which turned out well!
