Butternut & Sweet Potato Soup

Macronutrients (serving size = 1/5th of recipe) - 4g Protein, 0g Fat, 33g Carb

  • 350g Sweet Potatoes, peeled & cubed

  • 550g Butternut Squash, peeled & cubed

  • 200g Green Apple, peeled & chopped

  • 4oz Unsweetened Almond Milk or Coconut Milk

  • 1 cup low sodium Chicken or Vegetable Broth

  • Seasoning options: cayenne pepper, chili powder, garlic powder, salt, curry powder, ginger, cinnamon, nutmeg

    • Cook all ingredients in crockpot on high for 3-4 hours or low for 6-8 hours

    • Add to blender in a few cups at a time to blend smoothly, unless chunky texture is desired

Additional Toppings: nuts/seeds, greek yogurt, pesto, a protein such as chicken thighs or bacon
