Pasta Fagioli Soup

Macronutrients (serving size = 1/5th of recipe) - 28g P, 6g F, 37g C

  • 16oz 96/4 Ground Beef

  • 1 tbsp Coconut Oil (for cooking)

  • 1 Large Carrot, diced

  • 2 cups Spinach

  • 1 large Zucchini, diced

  • 3 cups Low Sodium Chicken Broth

  • 1 can Diced Tomatoes

  • 1 can Low Sodium Kidney beans

  • 1 can Low Sodium Cannellini Beans

  • 2 tsp Garlic Powder

  • 2 cloves Garlic, minced

  • 1 tbsp Onion Powder

  • 1 tsp Dried Basil

  • 1 tsp Dried Oregano

  • Salt & pepper to taste

    • Cook beef, drain fat and set aside

    • Cook garlic, carrots, and zucchini in coconut oil

    • In large pot, add everything but the beans and simmer about 10 minutes

    • Stir in beans
