Shrimp Tacos with Apple Pomegranate Salsa by the Nutmeg Nanny (vegan option inside!)

INGREDIENTS: (makes 4 servings)

  • 1-1/2 pounds medium-sized shrimp, cleaned and shelled

  • 2 tablespoons cajun seasoning

  • 2 tablespoons unsalted grass-fed butter or coconut oil

  • 2 limes, juiced, divided

  • 2 apples, cored and small diced

  • 1 small red onion, small diced

  • 1/3 cup pomegranate arils

  • 1/4 cup minced cilantro

  • Kosher salt, to taste

  • Black pepper, to taste

  • Small corn tortillas, toasted

  • Cotija cheese, for topping

DIRECTIONS:

In a bowl add shrimp and toss with Cajun seasoning. 

In a 12-inch skillet set over medium high heat add butter or coconut oil. Once hot add in the shrimp and half way through cooking add in the juice of 1 lime. Continue cooking until all the shrimp are pink. Set aside. 

While the shrimp cook (or earlier in the day) start making the slaw. 

In a bowl combine apples, red onion, pomegranate arils, cilantro, lime juice, kosher salt and black pepper. Stir to combine. 

To make tacos add 4-5 shrimp per taco onto toasted corn tortilla. Top with desired amount of salsa and cotija cheese.

*Swap the shrimp out for chickpeas and sweet potatoes to make your dish vegan!
