Spring Watermelon Salad

INGREDIENTS

  • 1 cup seedless watermelon, cubed

  • 1 cup arugula

  • 1 cup Spinach

  • 1/2-1oz blueberries

  • 1/2oz feta cheese, cubed

  • 1 tablespoons shelled pumpkin seeds (pepitas)

  • 1/4 cup fresh mint leaves (as desired)

  • 1 tablespoon extra virgin olive oil

  • 1/2 tablespoon red wine vinegar

  • 1 tablespoon lemon juice

INSTRUCTIONS

  1. Cut watermelon and feta.

  2. Place arugula and spinach in a bowl. Top with blueberries, feta, pumpkin seeds, watermelon, and mint.

  3. Mix red wine vinegar, olive oil, and lemon juice together. Drizzle over the top of salad and toss lightly.

  4. Top with baked chicken breast or thigh, smoked salmon, or grilled shrimp for additional protein!
