Homemade Coconut Granola

Macronutrients per 1/3 cup serving: 3g P, 5g F, 28g C (makes about 10-12 servings)

  • 2.5 cups old fashioned oats

  • ½ cup unsweetened coconut shreds or flakes

  • ½ cup honey

  • 2oz no sugar added dried fruit of choice, chopped (I’ve used freeze dried apples, freeze dried bananas, dried mango, dried apricots, and dried plums - all turned out well!)

  • 1/2 tbsp cinnamon (could also add ginger or pumpkin pie spice for different flavors)

  • 1 tsp salt

    • Toast oats, coconut, cinnamon, and salt on parchment paper & baking sheet for 12 min @350 degrees (stir occasionally)

    • Add honey and diced dried fruit (stir well)

    • Put back in oven and turn off

    • Leave for 10 min

    • Let cool before bagging

You could add nuts or seeds as well for a higher fat content or more texture!

This granola pairs well with greek yogurt or on top of a smoothie bowl.
