Macronutrients per 1/3 cup serving: 3g P, 5g F, 28g C (makes about 10-12 servings)
2.5 cups old fashioned oats
½ cup unsweetened coconut shreds or flakes
½ cup honey
2oz no sugar added dried fruit of choice, chopped (I’ve used freeze dried apples, freeze dried bananas, dried mango, dried apricots, and dried plums - all turned out well!)
1/2 tbsp cinnamon (could also add ginger or pumpkin pie spice for different flavors)
1 tsp salt
Toast oats, coconut, cinnamon, and salt on parchment paper & baking sheet for 12 min @350 degrees (stir occasionally)
Add honey and diced dried fruit (stir well)
Put back in oven and turn off
Leave for 10 min
Let cool before bagging
You could add nuts or seeds as well for a higher fat content or more texture!
This granola pairs well with greek yogurt or on top of a smoothie bowl.
